Fairmont Pacific Rim offers a full menu of dining options created by Executive Chef David Wong. ORU, a Pan-Asian bistro, provides a culinary journey around the Pacific Rim with authentic cuisine using locally sourced and responsibly harvested ingredients. Giovane, a casually-elegant Italian café + bakery + deli is dedicated to the serious business of coffee and serves a selection of deli sandwiches, thin-crust pizzas, house-baked pastries and scrumptious, signature cakes. The Lobby Lounge & Terrace is a perfect meeting place with floor-to-ceiling fireplace and cozy leather chairs. A Fazioli piano provides live entertainment and is a perfect complement to the classic cocktails and raw bar menu. In-room dining is also available 24 hours a day.

Oru
Oru, our Pan-Asian bistro in Vancouver, is derived from the Japanese word meaning “to fold”. Wallet-friendly, this free-standing restaurant features an open kitchen with two chef’s tables, a private dining room, and wine tasting area with the largest sake cellar in the city.
Executive chef David Wong, a recent competitor at the Bocuse d’Or culinary event in France, has created a harmonious fusion of east and west flavours in his kitchen. Open for power breakfasts during the week, Oru’s morning signature item is smoked sablefish benedict with lobster hollandaise sauce. House-made jams, jellies and marmalades with just-baked pastries and breads made from our scratch kitchen. Try our traditional breakfast buffet featuring an omelette station, eggs benedict, bacon, local pork or turkey sausages, grilled tomatoes, and an assortment of cereals, fruit, charcuterie and cheeses.
Among the lunch offerings are items like tandori roasted chicken, authentic Thai curry, Vietnamese subs on French baguettes, and bento boxes. Dinner showcases the chef’s culinary flair with traditional and authentic dishes from around the Pacific Rim. With tasty noodles, curry, BC seafood and variety of meat dishes, it’s hard to decide what to select!
Giovane
Giovane is a lively, sophisticated and eclectic cafe + bakery + deli in Fairmont Pacific Rim. Giovane is filled with light and air from a sparkling wall of drop-down windows. There is seating for 41 – several high stools face the street for people-watching and views, and there are low-slung cafe chairs to relax in. Giovane is uniquely and independently branded from the rest of the hotel – it has all the characteristics of a stand-alone Italian cafe that happens to be located in the remarkable Coal Harbour. We are licensed to serve, too!
Giovane is the place to experience coffee utopia. Our baristas take their coffee seriously, with an almost single-minded aim in serving an excellent cup of coffee. To accompany the coffee, we bake everyday – pastries, sweet, breads and cakes. In addition to seriously qualified coffee, giovane offers a selection of perfectly delicious deli sandwiches and pizzas, superb house-baked pastries and scrumptious, signature cakes. Our merchandise wall is unique and unparalleled, filled with one-of-a-kind items, beautiful hardcover books, glossy magazines and local and international newspapers.
Lobby Lounge and Terrace
A perfect meeting place from morning ‘til midnight, the Lobby Lounge's floor-to-ceiling fireplace and cozy leather chairs call out to sit down and relax. In the morning, custom-roasted coffee is accompanied with lollipops to stir in flavours of dark chocolate and vanilla bean and can be savored with a bakery-fresh pastry while people watching. The lunch menu features a variety of sushi, asian noodle bowls, and fresh flavorful salads; and the raw bar is an appetizing complement with its offerings of chilled seafood tower, oysters and sashimi.
Live entertainment is served nightly seven days a week, and weekend afternoons. Fairmont has established several exciting new partnerships, including one with EMI Canada and another with Shore 104 radio to bring you some outstanding entertainment as part of our ongoing Westcoast Music Sessions - a great way to wrap up the week over cocktails and contemporary live music.
Executive Chef David Wong
Little did David Wong realize when his macaroni and cheese dish won the grade eight “Best Cook Award”, that it was a sign of things to come. Twenty-five years later, he would be on the international cooking stage representing Canada at the world’s most prestigious culinary competition - the Bocuse d’Or.
Wong graduated from the Food & Beverage Management program at Vancouver Community College and the Culinary Arts program at Malaspina College. In 1997, he began his apprenticeship in Vancouver at the Creek restaurant with renowned chef Robert Allen Sulatycky, a former Bocuse d’Or competitor who Wong credits as his mentor. He completed his apprenticeship at the Delta Pinnacle, under 2005 Bocuse d’Or competitor Chef Morgan Wilson.
Cooking his way up the culinary ladder, Wong became executive sous chef at Fairmont Vancouver Airport in 2005, and moved to Fairmont Hotel Macdonald in Edmonton, Alberta as executive chef in 2007. From there, he returned to education and became lead chef instructor at the International Culinary School at the Art Institute of Vancouver.
In 2006, Wong joined the Culinary Team Canada in Basel, Switzerland where they won gold, and the same year he earned the right to represent Canada in 2009 Bocuse d’Or competition where they finished ninth in the world.
Now, as top toque at Fairmont Pacific Rim, Wong oversees the culinary operations for two eateries as well as the lobby lounge and 15,000 of meeting space. He describes his style as a “progressive, fundamentalist cook” and is looking forward to putting his new restaurants, Oru and Giovane’s on the Vancouver restaurant map. The focus will be on well-executed regional cuisine using local producers and purveyors – “it’s fresher and just tastes better”, Wong explains.

Willow Stream Spa – Purely Elemental.
The Spa is perched on the 5th floor of the hotel; with a focus on pure and natural, the first Willow Stream spa in Vancouver is a perfect fit with the Fairmont Pacific Rim. Surrounded in views, the spa offers nine treatment areas, including a couples’ room with deep Japanese Zen tub, a Nail Spa, three lounges (two with fireplaces), outdoor spa terrace and a full fitness centre.
Treatments are a full hour or 90-minutes but guests can linger longer and take full advantage of our spa’s facilities, including tranquil lounges; a yoga studio; and a boutique offering Willow Stream signature products. Ideal for groups or pampering parties, spa-goers can also enjoy lifestyle cuisine while they relax.
